  3. I didn't see your email, so I hope its ok if I answer your question here. The cornstarch adds a bit of softness. I use a blend of whole wheat flour and a bit of cornstarch instead of whole wheat pastry flour, feel free to use the pastry flour, or to substitute cornstarch with rice flour (also 'soft').
